Pork Loin Onion Pepper Jam Glaze

Ingredients

1 whole Pork Loin

2 Tablespoons Butter

1 Tablespoon Olive Oil

1 teaspoon Cajun Seasoning

2 whole Small Red Onions

3 whole Cloves of Garlic, Minced

⅔ cups Rollicking Buckaroo Pepper Jam

Instructions

Preheat oven to 400º.

In a Dutch oven, combine butter and olive oil on medium high heat.

Season pork loin with salt, pepper and Cajun seasoning.

Place meat in a Dutch oven and brown each side of the pork loin.

Cover the Dutch oven and place in a 400º oven for 25-30 minutes until the pork loin reaches an internal temperature of 160º. Remove from the oven and place your perfectly crusted pork loin on a board to rest while you make your glaze.

Place your Dutch oven on the stove on medium heat and throw in your diced onions and minced garlic. Make sure to scrape the pot to get all the delicious bits off from the pork loin. Once your onions and garlic are nice and brown, stir in your pepper jam. It should only take a couple of minutes for the pepper jam to loosen and become more like a sauce.

Pour pepper jam and onion glaze over the rested pork loin, slice and enjoy!!
